Avocado Pesto Pasta



  • 160g full wheat pasta
  • 1 medium avocado
  • Salt
  • Pepper
  • 25g walnuts
  • a handful of rocket salad
  • Juice of half a lemon
  • 1 handful of hazelnuts


  1. Boil the pasta in boiling salted water.
  2. Meanwhile, you should prepare the pesto by mixing the remaining ingredients - except the hazelnuts - in a blender until you get a cream.
  3. When the pasta is ready, drain it and add to the pesto along with some extra virgin olive oil as desired.
  4. Next, mix it well and put on a plate.
  5. Meanwhile fry the hazelnuts in a pan quickly, coarsely chop them into pieces and add them to the pasta.
  6. Add salt and pepper as desired.
  7. Enjoy!

Note: Do not prepare the pesto for too long before using it, otherwise it will oxidize and become brown.
