Raw Lime Cake

Ingredients:

Base:

  • 200g Almonds
  • 2 tablespoons Almond Butter
  • 2 tablespoons Coconut Oil
  • 6 Brazil Nuts
  • 100ml Coconut Flour
  • 3 tablespoons Coconut Sugar
  • 2 Medjool Pitted Dates
  • A pinch of Salt

Filling

  • 100g of raw Cashew Nuts (soaked and drained)
  • 1.5 soft Avocado
  • 2 Bananas
  • 2 tablespoons Coconut Oil
  • Juice of 2 Limes
  • 1 grated Lime Peel
  • Coconut Sugar, by taste

You will also need:

  • Baking tin (approx. 17cm in diameter)
  • Baking paper

Preparation:

  1. Blend all the ingredients for the base. You could also mix the dough by hand.
  2. Cover the baking tin with baking paper and spread the dough across. Press it all the way out into the edges.
  3. Prepare the filling by blending all the ingredients together.
  4. Put this mixture on top of the base and put it in the fridge or freezer to harden for a few hours.
  5. Decorate and enjoy!

Serving Tip:

You can serve the raw lime cake with fresh slices of lime, fresh strawberries and raw cocoa nibs or other decorations of your choice.
