Shrimp Stir-Fry with Shirataki Noodles

Ingredients:

  • 450g shirataki noodles
  • 1 tbsp coconut oil
  • 225g shrimp
  • 250g broccoli
  • 60ml hot water
  • 1 small carrot peeled & shredded
  • 1 thinly sliced onion
  • 3 cloves garlic finely chopped
  • 1/2 tsp finely chopped fresh ginger
  • 2 tbsp soy sauce (more to taste)
  • 1 tbsp oyster sauce
  • 1/2 tsp sugar

Instructions:

  1. Drain the shirataki noodles.
  2. Rinse them briefly with cold water.
  3. Preheat a medium or large pan with the coconut oil.
  4. Add the white part of the green onion and the garlic and ginger to the pan.
  5. Stir fry for about 1 minute.
  6. Add the broccoli and stir fry for about 2 minutes.
  7. Pour in the hot water and cook to let the broccoli wilt.
  8. Add the carrots and fry for another 30 seconds.
  9. Add the shrimp and stir fry until the shrimp turn pink.
  10. Add the rinsed shirataki noodles.
  11. Pour in the seasonings and stir fry to mix everything together.
  12. Add more soy sauce if needed. Garnish with the green part of sliced green onions.
  13. Serve immediately.
